1/2 watermelon
250g cherry tomatoes
250g blueberries
4 small cucumbers
¼ bunch basil
¼ bunch mint
1 lemon
1 teaspoon honey/maple syrup
4 tablespoons olive oil
Pepper
130g Boursin® Minis
Serve with a portion of wholegrain cereals and/or legumes.
Wash fruit and vegetables.
Dice the watermelon, halve the cherry tomatoes and slice the cucumbers.
Thin out the basil and mint.
In a bowl, squeeze the juice of one lemon, add the honey and olive oil.
Season with pepper and emulsify with a fork.
Arrange all ingredients in soup plates, drizzle with lemon vinaigrette and garnish with mint and basil leaves.
Add the Boursin® minis and serve immediately
