125 g Boursin® Minis of your choice
3 eggs
600 g leftover mashed potatoes
1 bunch of chive
60 g cooking cream
Lettuce
Large bowl, mini muffin tin
Use leftover Boursin mashed potatoes.
Combine them with the eggs and finely chopped chives.
Fill the mini muffin tin with the mixture and gently press down using your thumb to create a small well, in which you can place a Boursin mini.
Bake for 25 to 30 minutes at 190°C.
Allow to cool down and serve your potato bites with a side of green salad.
