125g of Boursin® Minis
3 eggs
600g of leftover mashed potatoes
1 bunch of chives
60g of fresh cream
Lettuce
Recover leftover mashed potatoes from a previous recipe
Mix leftover mashed potatoes with eggs and finely chopped chives.
Fill the mini-muffin tin with the mixture and press lightly with your thumb to create a small well in the center of the mixture and place a Boursin® Minis in the center.
Place in the oven for 25/30 minutes at 375°F.
Let cool for a few minutes and serve with a lettuce salad.
