1 cup Boursin® Cuisine Garlic & Fine Herbs
1 tbsp. Olive Oil
1 Large Yellow Onion, diced
3 lb. Butternut Squash, peeled, seeded & cubed
3 Cloves Garlic, minced
1 tbsp. Fresh Sage, diced
½ tsp. Fresh Thyme, minced
½ cup Coconut Milk
3 cups Vegetable Broth
1 tbsp. Kosher Salt & Black Pepper
Pumpkin seeds & sage to garnish
Heat oil in large pot over medium heat. Sauté onion & a pinch of salt until soft.
Add squash & cook 5 minutes.
Add garlic, sage, thyme & broth. Bring to boil, reduce heat, cover & simmer for 30 min.
Add coconut milk, ¼ cup Boursin® Cuisine, salt & pepper.
Blend soup in blender until smooth. Season to taste.
Serve with large dollop of Boursin® Cuisine, pumpkin seeds & sage.
