Preheat oven to 180°C (or 350F)
Wash, peel and cut the sweet potatoes into thin slices crosswise
Sprinkle the slices with salt, pepper and brush with olive oil
Oven-bake the sweet potato slices until fork-tender and golden
Once they are cooked, in a serving plate, create stacks of sweet potato slices
Top each stack with a generous amount of Boursin Garlic & Fine Herbs
Garnish with a sprig of rosemary
